Success!

About three years ago I, along with my cousin Amy and friend Matt, attempted to make Mochi Ice cream. It was a disaster! (See following pictures).

Thumbs down. I think we just left the mochi ice cream in the freezer and they were hard as a rock. Too gross to eat.

But yesterday as I was browsing the interenet I came across a recipe for Mochi Ice cream. It looked pretty easy so I decided to try it last night. The result? Success! And tasty too!


I told my cousin and she was excited. We finally have closure to our mochi disaster.

This is a little late, but I'm finally getting around to some updates.

This month was my Dad's birthday! I bet you can't guess how old he is...



Since everyone back in Hawaii calls my dad Eddieboy, I used to call him Daddy-boy when I was little.

Cause for a Celebration...

So before Matt submitted his application for the accounting program he said, "If I get in let's go to Tepanyaki." I said, "Oooh, let's go to The Cheesecake Factory or The Melting Pot." So on Wednesday we went to....


Matt won. But I still want fondue. After all, I helped with the application. I deserve a little something, right?

The table to chair ratio is really awkward (and I'm short) so Matt stacked 2 chairs for me to sit on. It was perfect.

Happy 4th of July!

Matt and I had a fun-filled 4th of July.


All of us from the office ran the Freedom Run 5k Saturday morning. We were able to catch Chad & Michele Lewis after for an AIS picture.

Stadium of Fire! Matt and I have been to the Stadium of Fire every year since we started dating and I FINALLY took a picture of us.


The stadium was packed. This year's show wasAMAZING. I thought they did a great job with every part of the show. This was my favoite Stadium of Fire yet!


The Jonas Brothers performed this year. They put on a great show and are so cute! (even if all are younger than me) There were so many young screaming girls!

Weekend Retreat...

After a long week we (me & the ladies from the office) all took a weekend retreat to St. George. What a nice, relaxing weekend.

We stayed at a donor's beautiful home on the Entrada Golf Course (This is where they filmed HSM2).

Much better in person, but they had a breathtaking view from their front room.

We also watched the Tuacahn production of Footloose.

...And when Matt and I had time, we snuck away and watched The Proposal. I love Sandra Bullock. I'm determined to buy the Christian Louboutin pumps she wore in this movie. I love them!

All in a Week's Work

Last week at work we held our annual Celebrity Banquet & Auction and Golf Tournament. Am I glad it's over? Yes! This week consists of looong hours, late nights, early mornings, hot sun, standing all day, confusion, and indigestion from all the junk food we stuff in our faces.

This year was more enjoyable...why? Because Matt was at both events and seeing him always brightens my day!

Our entertainment for the evening was Allison Krauss and The Dan Tyminski Band

At the end of the evening I was so happy to see Matt. He's such a cutie.

The following day was the golf shootout. A beautiful view from Hole 7 at Thanksgiving Point.

The Star of the Day...Matt and his team won 1st place, Matt won the Long-drive competition AND Closest to the Hole. What a good day of golf for Matt. Here he is with his prizes....he's all smiles.

A Few Weeks ago...

Matt and I went down to St. George for the Brown Family Reunion. It was a nice getaway and the weather was perfect! We enjoyed lots of eating, visiting, swimming , golfing, and wave running.


The drive down was beautiful. Everything was so GREEN.
